Warped cutting board: why and how to straighten it?

You take out your cutting board and surprise: it no longer lies flat on the countertop. Don't worry, a warped board is neither a defect nor a lost cause. It's a natural reaction of wood, and in most cases, it can be easily corrected at home.
Why does a wooden board warp?
The culprit is uneven water evaporation. After washing, when the board is laid flat on the countertop, the side exposed to the air dries quickly, while the side in contact with the countertop remains wet longer. This difference in humidity between the two sides creates tension in the wood, causing it to curve.
Good to know: the thinner and wider a board is, the more susceptible it is to warping. Thicker boards naturally resist deformation better.
Two simple methods to straighten it
1. Flip the board over
The simplest method: place the board convex side down on a flat surface and let it sit for 24 hours. The wood will rebalance itself. To speed up the process, weigh it down with heavy objects: books, Dutch ovens, pots.
2. Damp cloth and weight
If simply flipping it over isn't enough, place a damp cloth on the concave side, then press the board with a weight for a few hours. The humidity combined with the pressure helps the wood regain its shape uniformly.
Wood remains a living material
A straightened board can warp again: wood continues to react to humidity throughout its life, absorbing and releasing water with each use. This is a characteristic of a natural material, not a manufacturing defect.
To limit the phenomenon daily: always dry your board vertically upright after washing (never flat on the countertop) and oil it regularly.
